FIXING FENAZTIES.
SECTION 1. No persons , firm, association or
corporation shall sell within the limits of the City- of
Wichita Falls , Texas, any bread or bakeshop products with-
out having first applied for and obtained a permit so to
do from the Board of health of the City of Wichita Falls ,
Texas. The permit number shall be conspicuously posted
in every bakeshop, store, or other place from which bread
or other bakehhop products are sold; and if any wagon,
cart or other vehicle is used for the delivery or distribu-
tion of bread or other bakeshop products, the permit number
shall be painted on each side thereof in figures not less
than four inches in height.
SECTION 2. Any place used for producing, mix-
ing, compounding or baking for sale any bread, biscuit,
crackers, rolls, cake, macaroni, pie, or any food pro-
ducts of which flour or meal is the p-rihe ipal ingredient,
shall be deemed a bakeshop.
SSCTIOIJ 3. Any place used as a bakeshop shall
be provided with floors of Closely impervious material
which can be thoroughly cleaned.
SECTION 4. Every baker, or other person in
charge of any bakeshop,shall keep the floors, side walls,
ceilings, woodwork, fixtures, tools, machinery and uten-
sils in a thoroughly cleari and sanitary condition , and.
every bakeshop shall be provided with adequate ventilation
so as to insure free circulatior: of air at all tines.
SECTION 5. The door and window openings of
every bakeshop shall be provided with soind screens of
mesh s-ufficiently fine to keep otzt flies grid other in-
sects.
SECTIOII 6. The side walls and ceilings of
every ba.-�eshop shall be well plastered, or sheathed with
metal, wood, or tile. All plastered walls or ceilings
shall be kept lime washed or calcimined , or shall be
painted with oil paint, and all wood work in every bake-
shop shall be well oiled and painted and washed clean.
SECTIOiJ 7. It shall be uxilawful for any owner ,
agent, or lessee of a bakeshop, mak.i_ng use of a portable
oven, to cover the same with dirt , sand or ashes, unless
the same be protected by some proper covering to prevent
dust flying about the room.
SEQTION S. The use of open .rigs under ovens as
places of storage for coal, coke, and ashes is prohibited ,
unless the same be placed in covered tight barrels .
SEC�'Ii 9. The floors of all Oakeshops must be
scrubbed with soap and water once a week and scraped daily.

Every washstand. in bakeshop shill be provided with clean
towels and soap at all tines.
SE T10N 11. ITo persor.,.s shall sleep in a bake-
shop,and the sleeping places of persons employed in bahe-
shops shall be kept separate from the place where flour
and meal or food products are Handled or stored.
SECT 1011 12. No domeotic anlinals shall be per-
mitted in a bakeshop or place where food products are
stored in connection therewith.
SECTIO T 13. ;very owner or p,: son. in cl- r-e of
a bakeshop shall be required to keep 7-_ i_-rself and !J3 em-
ployees in a clean w.�rdition and suitably clothed �r�hile
engaged in the production, handling, , or selling of bake-
shop products, and shall provide a dressing room, separated
from the place where flour or deal or other food products
are stored or kept.
SEC°l I0N 14. "Receptacles for exl,ec tora tiori, of
inipervious raaterial, must be cleaned at least once in
every twenty-four hours , and shall be maintained and. kept
by the person in charge of every bakeshop, ail (I no atten(da« t
or other person shall spit on the floor, side-walls, or on
any place in such bakeshop.
SEOn,101 15. Smoking, snuffing or chewing tobacco
is forbidden in a bakeshop. Notice forbidding all persons
to use tobacco or to spit on the floor or side walls shall
be posted in every bakeshop. No newspaper or soiled paper
of any sort shall be used during the baking process or for
wrapping articles designed for sale or delivery as human
food .
SECTIOiu 16, No person who has tuberculosis, ven-
ereal or other corrmuunicable disease , shall work in a bake-
shop, and no person in charge of such bakeshop shall re-
quire, permit or stiffer such person to be employed.

SECT IO.1 17. All rooms for the storage of flour
or other food products, used in connection with a,n;;r bake-
shop, shall be dry and well ventilated ; and evor y bake-
shop and rooms used for the storage of materials a,ncl food
products, in connection therewith, shall be provided with
shelves, trays , troughs, bins, cases, and all other appli-
ances for handling and storing the same wl,_ich will protect
such flour, meal or other food products from rats , mice,
roaches, flies, and other contaminating vermin, and. which
shall be regularly moved and cleaned as often as may be
necessary ,
Sie:lION 16. All prepared foods , bread , cakes,
pastry, confectionery, and other cooked or prepared food
stuffs, shall not be exposed to contamination by dust,
insects, or other extraneous substance, within or without
such rooms ; and if not securely and constantly wrapped or
enclosed and sold. in original packages and. coverings, same
shall be kept in a secure and closed. container, such as
shall afford complete protection from such contamination,
except when removed from such case or container for the
immediate purposes and operations of si,ch business.
SECTION 19 . All wagons, carts , or other ve-
hicles used in the City of -Wichita Falls , Texas, for the
delivery or distribution of bread or other bakeshop pro-
ducts shall be constructed so as to prevent flies , dust,
and other contamii3ating matter from enterifie into said
wagon, cart, or other vehicle, or upon its ceiitents.
(a) The delivery wagon, auto , or other vehicle
must be equipped with a. door or curtains, moth front and
back, so that the bakeshop products are securely .protected

from dust and flies . If ventilation is necessorIT, this
can be provided bvT having small holes in the front and
rear doors near the top, but these small holes must be
covered with screen wire.
(b) At the end of each days run the wagon
must be thoroughly brushed out inside , so as to remove
all crumbs , dust and waste, and shall then be carefully
ventilated.
( c) At least once a week the wagons must be
thorotig,hly scoured with hot water and soap .
(d) No one but a healthy person shall be per-
mitted to be a driver of a vehicle for the delivery of
bakeshop products. The driver of a bakeshop wagon shall
be neat and clean in his dress.
(e) The proprietor of the bakeshop mist sup-
ply the deliveryman with a clean basket , tray or other
receptacle, which is to be provided with a cover or sor,,e
means of protecting bakeshop products while they are being
transferred from the wagon to the customer.
( f) Bakeshop products that are wrapped in oiled
paper need. not be handled as outlined above.
SECTION 20 . THE entire yards and pre:Lises occu-
pied by any bakeshop shall be well drained and all back
rooms, sheds, yards, or other places connected by any
opening with any such place, shall at all times be kept
in a cleanly and sanitary condition, free from filth,
refuse, garbage, trash and rubbish.

3i2TI011 21. The Board of Health may require
all bread offered or intended for sale within the City
of Wichita Falls, Texas to be suitably wrapped, each
loaf separately, in paraffin paper, in si.ich manger as
to completely protect the bread from dust and dirt.
SECTION 22. INoever shall do anTT of the acts
or things prohibited, or wilfully neglect or refuse to
do any of the acts or the things enjoined by this Ordinance,
or in any way violate any of its provisions, shall be
deemed guilty of a misdemeanor, and shall be punished
by a fine of not less than 25.00 nor more than N200.00.
